Ruby Tuesday - Subtle Salad


Ruby Tuesday is a tasty meme that we hunger for. Okay, the food metaphors may be slightly over the top, but this week's entry (entre?) offers a bit of red. A barley salad was prepared, and I felt that the red pepper added some ruby color to the colorless grain and chickpeas. Since it was December, the green peas and red place mat added a holiday flair that enhanced the simplicity of the salad. A little or a lot of ruby adds a sporty flair to nearly any subject. Yum, barley salad. Red peppers for Ruby Tuesday. Soy sauce? Lemon? Olive oil? How is it seasoned? The peas look good, too - green, like the plate! Oh, now I see the red tablecloth. Funny, how I did notice it at first.

I made a marinated salad with shoe peg corn, baby green peas, french cut green beans. Then add green, yellow and red bell peppers cut up in small pieces along with chopped purple onion and chopped pimento. Then marinate it over night in a mixture of sugar and vinegar heated first. It makes a lovely colorful salad.

Hi Ralph, your barley salad looks good. I assume it is the bean salad recipe with the barley and pea substitution. I don't eat peppers, they eat me.

I don't believe that I have ever heard of a barley salad but I do love a nice bowl of beef and barley soup from time to time!
