Ruby Tuesday - Edible Rubies



Ruby Tuesday is fun, and tasty if the addition of food is introduced. The top item is a quick scallop casserole that I assembled yesterday. This included the seafood, , unsalted butter, cracker crumbs, sauteed potatoes and onions, fresh oregano and - voila - roasted red peppers. So the minimum ruby requirement has been met! The crackers when baked give a sepia tone, 'tis true. But enough red is apparent for compliance...








The red is enhanced by the grape tomatoes, alas store bought as our last garden fruit having been consumed last month. Sitting upon spinach leaves and lightly dressed, the ruby is a bit more apparent here than with the entrée. See more rubies, harvested by many photo artists at Mary's great meme!

Yummy! I have some frozen scallops and shrimp, I bet would work great in that casserole!

The red tomatoes and green spinach leaves make a beautiful presentation on the plate with black and white rim. Now I'm hungry!

I'm a scallop lover, this one definitely makes me drool.
I should perhaps try making a casserole dish with scallops soon =D

Hi Ralph, your casserole sounds sooooo good. And it looks really good too!
I am glad you put the red in so we could see your creation. Thank you.
My Grandma used to make scalloped oysters using soda crackers. I think they lined her pot. Anyway no one in the family can make them.
If yours is really a voila quickie I might look for a recipe. I do like 'seefood.'

And yes, I won't even use the drive-thru on some of the Taco Bells. I think they have outsourced their order takers to Oregon or Colorado.

Your scallop dish sounds and looks tempting. I just bought some frozen scallops yesterday. Will try your recipe tomorrow.

That scallop casserole sounds great. I love scallops, I just wish I didn't need to take out a second mortgage just to buy some over here, they're a real once in a blue moon only for a special occasion treat. I wonder if they're flying them in all the way from NE...

I'd say that the red peeking out from the casserole definitely fulfills the "ruby" requirement. The added bonus is once you got a picture for the meme, you got a meal out of the deal, too!
